Borrowdale Teabread

Ingredients
- 9 oz plain flour
- ½ teaspoon bicarbonate of soda
- 16 oz mixed fruit
- 1 oz butter (melted)
- 6 oz soft brown sugar
- 1 egg
- ½ pint strong tea
Method
- Soak fruit overnight in the tea
- The next day, stir in the sugar, beaten egg and melted butter
- Sieve together the flour and bicarbonate of soda and fold them into the mixture
- Divide the mixture between two greased/ lined 1lb loaf tins
- Bake for one hour on gas mark 4 – electric 180c – 350f
